How to make Potato Chip Cookies
Potato Chip Cookies are fun and easy to whip up, which make them a perfect recipe to make with little ones. The kids will have a ball crushing (and snacking on) the potato chips, while you get the other ingredients ready.
Equipment Used
- Mixing Bowls – used to mix ingredients
- Handheld Mixer – used to cream the butter and sugar together
- Baking Sheet – used to bake the cookies
- Cooling Rack – used to place the baked cookies to cool
Ingredient List
- Shortbread Dough – butter, sugar, vanilla extract, all-purpose flour
- Additions – thick-cut potato chips with ridges, walnuts
Potato Chip Cookie ingredients are simple and easy to find. The brand of potato chip used is completely up to you, but the chip does need to be thick-cut. A thin chip will not hold up well when mixed into the dough. We want to see that salty crispy goodness stand out when the cookies are baked!
Recipe Preparation
- Preheat oven to 350 degrees. Place parchment paper or a silicone baking mat on a large baking sheet and set aside.
- Before you begin this recipe, make sure the butter is softened (at room temperature). Using a handheld mixer, blend the butter and sugar together until smooth. Add vanilla extract and blend until combined.
- Add all-purpose flour to the butter-sugar mixture. To make sure you don’t create a giant dust storm in your kitchen, stir the flour around a little with the beaters off first. Next, turn beaters on and blend until dough is fully combined.
- Now it’s time for the fun part, crushing those potato chips! We want these cookies to be well-balanced between sweet and salty. To do this, make sure the potato chips are in chunks and not finely ground.
- Chop the walnuts into small pieces. Using a spoon, carefully blend potato chip crumbs and chopped walnuts into the cookie dough until fully incorporated. Do not use beaters for this step.
- Using a tablespoon, spoon rounds of cookie dough onto prepared baking sheet. These cookies will not flatten during baking. To flatten prior to baking, set aside a bowl of sugar and a drinking glass (or other flat bottomed dish). Take the glass and dip the flat bottom into the sugar, then press down on the mound of dough on the prepared baking sheet. After each “press”, dip the glass back into the sugar to re-coat so the dough does not stick to the glass.
- Bake cookies for 10 to 12 minutes, or until edges are a light golden brown. Remove from oven and place cookies on a cooking rack.
