Using a handheld mixer, blend the butter and sugar until smooth. Add vanilla extract and blend until combined. Add all-purpose to butter-sugar mixture and blend until fully incorporated.
Using a spoon, carefully blend in potato chip crumbs and chopped walnuts. Do not use beaters for this step.
Using a tablespoon, spoon rounds of cookie dough onto prepared baking sheet. These cookies will not flatten during baking. To flatten prior to baking, prepare a bowl of sugar and a drinking glass (or other flat bottomed dish). Take the glass and dip the bottom into the sugar, then press down on the mound of dough on the prepared baking sheet. After each "press", dip the glass in sugar again or the dough could stick to the glass.
Bake cookies for 10 to 12 minutes, or until edges are a light golden brown. Remove from oven and place cookies on a cooking rack to harden.

Helpful Tip: For an even sweeter treat, add butterscotch chips to the cookie dough.
