How to make these healthy goodies even healthier
As far as healthy holiday desserts go, Peanut Butter Stuffed Dates are an excellent choice! If you want to make them even better for you, there are a couple of modifications you can make:
- The Peanut Butter: I use Jif peanut butter because I have loved its flavor since childhood sandwiches. A healthier alternative would be almond butter, cashew butter, or any nut butter with no added sugars or preservatives.
- The Sugar: I use granulated sugar for rolling to add a little crystalized sweetness to the dates. To make them healthier, you can use Truvia or granulated Swerve (both are artificial sweeteners). I do not suggest skipping this part, however; because the peanut butter will get messy without a coating.

Recipe Preparation
- Take each date and spread them apart where they have been split.
- Using a small spoon for knife, fill the cavity of the date with about 1 half to 1 teaspoon of peanut butter. The amount of peanut butter used will depend on the size of the date.
- Dip the filled date in the granulated sugar and roll it around to coat all sides. It works best if you place the date peanut butter side down first, then roll.
- Keep Peanut Butter Stuffed Dates in an air tight container. They do not have to be refrigerated.
