Peanut Butter Stuffed Dates are going to be one of the easiest recipes you will ever make! Large naturally sweetened dates are stuffed with creamy peanut butter, then rolled in sugar. Addictive? Absolutely! My mother-in-law introduced me to these delicious healthy treats when I entered the family 11 years ago. She used to lovingly make Peanut Butter Stuffed Dates as gifts for the family every Christmas. They were always a huge hit and never lasted long at our house. These continue to be one of Hubby’s favorites.

The two things to love about Peanut Butter Stuffed Dates is that they are made in a jiffy and they are a healthy alternative to the many cookies and candies that tempt us during the holiday season. I hope you enjoy this delicious recipe from our family to yours.

How to make these healthy goodies even healthier

As far as healthy holiday desserts go, Peanut Butter Stuffed Dates are an excellent choice! If you want to make them even better for you, there are a couple of modifications you can make:

  1. The Peanut Butter: I use Jif peanut butter because I have loved its flavor since childhood sandwiches. A healthier alternative would be almond butter, cashew butter, or any nut butter with no added sugars or preservatives.
  2. The Sugar: I use granulated sugar for rolling to add a little crystalized sweetness to the dates. To make them healthier, you can use Truvia or granulated Swerve (both are artificial sweeteners). I do not suggest skipping this part, however; because the peanut butter will get messy without a coating.

How to make Peanut Butter Stuffed Dates

  • NOTHING! That’s right! You need no special equipment for this recipe. You’re welcome! 😉

Ingredient List

  • Pitted dates – Medjool dates are a larger variety date that are great for this recipe.
  • Creamy peanut butter – I use Jif, but any brand is okay.
  • Sugar (for rolling)

Recipe Preparation

  • Take each date and spread them apart where they have been split.
  • Using a small spoon for knife, fill the cavity of the date with about 1 half to 1 teaspoon of peanut butter. The amount of peanut butter used will depend on the size of the date.
  • Dip the filled date in the granulated sugar and roll it around to coat all sides. It works best if you place the date peanut butter side down first, then roll.
  • Keep Peanut Butter Stuffed Dates in an air tight container. They do not have to be refrigerated.

Notes

Helpful Tip: To make these little dates even healthier use a nut butter with no added sugar (almond, cashew, tahini), and use a sugar alternative for rolling (Truvia or Swerve).
