If you’re not in the mood for shrimp, you can substitute using chicken or steak with the same amazing results. The seasonings and method of cooking will be the same for either. If using chicken, cut breasts into thin strips and cook for 3 to 5 minutes, or until no longer pink. If using steak, cut into thin strips and cook until desired doneness.

Easy Skillet Shrimp Fajitas Creamy Avocado Sauce
There are a lot of spices used in this recipe. All of them should be found in the spice aisle of your grocery store. If you are having difficulty finding Sazón seasoning, it may be located in the grocery aisle with the International food items.
- Shrimp – large shrimp, peeled and deveined, fresh or thawed
- Seasoning Mix – chili powder, paprika, onion powder, Sazón seasoning, cumin, garlic powder, salt and pepper
- Oil – olive oil for sautéing
- Vegetables – red, yellow, and green peppers, onion
- Fruit – lime wedge for spritzing
- Creamy Avocado Sauce – avocado, low-fat Greek yogurt, garlic clove, juiced lime, parsley, salt and pepper
Easy Skillet Shrimp Fajita Recipe Preparation

- In a small bowl add the chili powder, paprika, onion powder, Sazón seasoning, cumin, garlic powder, salt and pepper, mixing until well blended.

- Place the peeled and deveined shrimp into a medium bowl and pour in the spice blend. Stir until the spice mix is evenly distributed over the shrimp. Set seasoned shrimp aside until ready to cook.

- Rinse off and dry each pepper. Place on a cutting board and slice in half. Remove the top stem, membrane, and seeds. Slice peppers into thin slices.

- Peel the skin off of the onion and cut off the ends. Slice the onion halves into thin strips.

- In a large cast iron skillet (or large skillet of your choice), add 1 tablespoon olive oil and heat on medium-high. Once the skillet is hot, add the peppers and onions. Sprinkle with salt and pepper to taste and sauté until tender (I like to cook until they are slightly charred to add a smoky flavor). Cut a lime wedge and spritz the juice over the pepper/onion mixture while cooking.

- Slide sautéd vegetables over to the side of the skillet and add another tablespoon of olive oil in the cleared section. Add the seasoned shrimp and sauté until no longer pink, about 3 to 4 minutes. Spritz shrimp with a lime wedge while cooking. Serve immediately with Creamy Avocado Sauce, warm flour tortillas, and toppings of your choice; cheese, cilantro, salsa, etc.
Creamy Avocado Sauce Recipe Preparation

- Peel the garlic clove, but leave it whole. You could chop it if desired, but it’s not necessary since it’s going into the food processor to be puréed.

- Slice the avocado in half. A perfectly ripened avocado will separate easily with no flesh attached to the seed. Carefully, whack a knife into the seed and gently remove it. If the seed is reluctant to come out, twist the seed gently to loosen with the knife still inserted. Slide a large spoon around the edges of the peeling and scoop out the flesh whole. Or, cut the halves in half again, and simply peel off the peeling by hand.

- In a food processor with the chopping blade, add the clove of garlic, avocado slices, low-fat Greek yogurt, parsley leaves, juice of 1 small lime (if using a large lime, juice only half), and salt and pepper to taste. Pulse until all ingredients are well blended and smooth. Taste for seasonings. If sauce is too salty or you taste too much lime, add more yogurt and blend. Serve with Easy Skillet Shrimp Fajitas.

- 2 Tbsp olive oil divided
- 1 red bell pepper sliced into thin strips
- 1 yellow bell pepper sliced into thin strips
- 1 green bell pepper sliced into thin strips
- 1 onion sliced into thin strips
- 1 small lime cut into wedges
Creamy Avocado Sauce
- 1 avocado halved, seeded, and peeled
- 1/2 cup low-fat Greek yogurt
- 1 garlic clove
- Juice of 1 small lime
- 2 Tbsp parsley
- Salt and pepper to taste

- In a large cast iron skillet (or large skillet of your choice), add 1 tablespoon olive oil and heat on medium-high. Once the skillet is hot, add the peppers and onions. Sprinkle the vegetables with salt and pepper to taste and sauté until tender. Take one wedge of lime and spritz the juice over the pepper/onion mixture while cooking.
- Slide sautéd vegetables over to the side of the skillet and add another tablespoon of olive oil in the cleared section. Add the seasoned shrimp and sauté until no longer pink, about 3 to 4 minutes. Spritz shrimp with a wedge of lime while cooking. Serve immediately with Creamy Avocado Sauce, warm flour tortillas, and toppings of your choice; cheese, cilantro, salsa, etc.

- In a food processor, add the clove of garlic, avocado slices, low-fat Greek yogurt, parsley leaves, juice of 1 small lime (if using a large lime, juice only half), and salt and pepper to taste.
