Preheat oven to 350 degrees. Line a large rimmed baking sheet with aluminum foil. Place strips of bacon on prepared pan and bake for 30 minutes, or until just crisp. Drain bacon on paper towels.
Chop bacon and mix with maple syrup. Set aside to thicken while mixing other ingredients.
Line a large cookie sheet with parchment paper and set aside.
Using a handheld mixer, blend the butter and sugars until light a fluffy. Add the egg and blend until well combined, then add the vanilla extract.
Whisk together flour and baking soda to blend thoroughly. Using a spoon, stir flour mixture into the batter. Add the maple bacon and chocolate chips, blending until fully incorporated.
Scoop heaping teaspoons of dough onto prepared cookie sheet and sprinkle with sea salt. Bake cookies until golden brown around the edges, about 10 to 12 minutes. Place on cooling rack to cool.
Notes
Helpful Tip: If you are in a hurry, you can use pre-cooked bacon crumbles. The cookies will still be delicious, however; they will miss the smoky flavor you get with fresh cooked bacon. You will need 1 cup of bacon crumbles.
