In a small saucepan, combine gelatin and cold water and allow to sit until mixture thickens.
Place the pan on the stove over low heat and stir until the gelatin dissolves. Remove from heat and allow to cool, BUT DO NOT LET IT SET.
Using a stand or hand held mixer, whip heavy cream, vanilla extract, and Swerve until it starts to thicken.
Add in the gelatin and whip until stiff peaks form.
The whipped cream is now ready to place into a piping bag and begin decorating your dessert.
